Dan Dan Noodles: A Spicy and Savory Sichuan Delicacy

Dan Dan Noodles is a famous Sichuan street food that has gained popularity worldwide for its spicy and savory flavor. The dish consists of egg noodles served with a spicy Sichuan sauce made with chili oil, Sichuan peppercorns, minced meat, and scallions. The dish is named after the carrying pole (dan dan) that street vendors used to carry the noodles and the sauce in separate containers.

  3. Add the ground pork and stir-fry until it’s browned and cooked through.
  4. Add the garlic, ginger, and Sichuan preserved vegetable, and stir-fry for another minute.
  5. Add the soy sauce, Chinese black vinegar, Shaoxing wine, and ground Sichuan peppercorns, and stir to combine.
  6. Add the chili oil and chicken stock, and stir until everything is well mixed.
  7. Bring the sauce to a boil, then reduce the heat and let it simmer for a few minutes until it thickens.
  8. Season the sauce with salt and pepper to taste.
  9. Divide the cooked noodles into serving bowls.
  10. Pour the sauce over the noodles, and garnish with sliced scallions.
