Ingredients:
- 8 oz fresh egg noodles
- 4 oz ground pork
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons Sichuan preserved vegetable (zha cai), finely chopped
- 2 tablespoons soy sauce
- 2 tablespoons Chinese black vinegar
- 1 tablespoon Shaoxing wine
- 1 tablespoon Sichuan peppercorns, toasted and ground
- 1/4 cup chili oil
- 1/2 cup chicken stock
- 2 stalks scallions, thinly sliced
- Salt and pepper to taste
Instructions:
- Cook the egg noodles according to package instructions, then drain and rinse them in cold water.
- In a wok or large skillet, heat up 1 tablespoon of vegetable oil over medium-high heat.
- Add the ground pork and stir-fry until it’s browned and cooked through.
- Add the garlic, ginger, and Sichuan preserved vegetable, and stir-fry for another minute.
- Add the soy sauce, Chinese black vinegar, Shaoxing wine, and ground Sichuan peppercorns, and stir to combine.
- Add the chili oil and chicken stock, and stir until everything is well mixed.
- Bring the sauce to a boil, then reduce the heat and let it simmer for a few minutes until it thickens.
- Season the sauce with salt and pepper to taste.
- Divide the cooked noodles into serving bowls.
- Pour the sauce over the noodles, and garnish with sliced scallions.
Dan Dan Noodles are best enjoyed hot and fresh, so make sure to serve them immediately after making.
